How do you like your Agrodolce Peppers?
This recipe is a tried and true favourite that never disappoints. You can find versions of it all over Italy and in most good cookbooks.
This is my favourite way to make it and is quite easy.
1 kilogram of red/green capsicums (sweet peppers)
1 tablespoon of white sugar
3 tablespoons of vinegar
2 tablespoons of capers
2 garlic cloves finely chopped
salt & pepper to taste
Remove tops from the capsicums and deseed. Chop into rounds about half an inch think.
Add 3 tablespoons of olive oil to your pot and turn on the heat
Fry the garlic for 30 seconds and then add the peppers and stir
Cook peppers for 3-4 minutes till they begin to soften
Add the capers, sugar, salt, pepper and vinegar
Stir occasionally so they do not stick to the bottom of the pot
Put a lid ajar on the pot and continue to cook for around 30 mins until peppers have softened and a sweet/sour stickiness has developed coating the peppers
Can be prepared ahead a day, eaten hot or cold. Enjoy!
